Spinach quiche can be served as a delicious breakfast or mid-day snack. It is healthy, nutritious and filling. You can add capsicums, peas or carrots to further enhance the flavour.

Ingredients:

1 tablespoon butter

¼ teaspoon oil to grease baking dish

1 medium onion (chopped)

1 bunch of chopped fresh spinach leaves

3 large eggs

4 large egg whites
-
1 cup grated Cheddar cheese

1 cup grated Mozzarella cheese

¼ tsp chilli flakes

Salt and pepper to taste
Method:

Preheat the oven to 350° F. Grease a deep baking with some oil.

In a large pan, melt butter over medium heat. Add the chopped onions and cook until the onions are softened.

Add the chopped spinach and cook until the spinach has reduced in size. Remove from heat and let it cool.

In a large bowl, whisk the eggs and egg whites with a blender. Stir in the grated cheeses, salt and pepper. Add the spinach preparation.

Pour the mixture into the baking dish. Bake for 30 minutes, until quiche is set and browned. Remove from oven and let the quiche cool for a few minutes before serving.
