Cream of Mushroom Soup

Preparation Time: 10 minutes

Cooking Time: 20 minutes

Makes 4 servings

Ingredients:

. 2 cups white button mushrooms or cremini mushrooms, cleaned and thinly sliced

. 2 teaspoon cooking oil

. 1 tablespoon butter

. 2 cloves garlic, finely chopped

. 1 tablespoon whole wheat flour

. 3 cups water

. ½ teaspoon pepper, crushed

. Salt to taste

. 1.5 cup milk

Method:

. Heat oil and butter in pot and add garlic. Sauté for a minute.

. Add sliced mushrooms and sauté and cook the mushrooms till they shrink in size.

. Add maida and sauté for a minute or till the raw smell disappears.

. Add crushed pepper and salt to taste. Cook for 5 minutes.

. Switch of the gas and transfer the mixture to a blender and puree the entire mixture once it has slightly cooled.

Transfer the blended puree back to the pan. Add milk for extra creaminess.

. Simmer for a minute and serve hot.
