Oats khichdi is nutritious especially during monsoon as it is easily digested and a good source of macro and micronutrients.

Ingredients:

Oats – 1 cup

Onion – ½ (50 g)

Tomato – ½ (50 g)

Carrot – 1 small

Peas – ¼ cup

1 Green chilli
-
Mustard seeds – 1 teaspoon

Cumin seeds – 1 teaspoon

Urad dal – 1 teaspoon
-
Chana dal – 1 teaspoon
-
Turmeric powder – ¼ teaspoon

Salt as per taste

Water to adjust consistency

Coriander leaves
Method:

Heat the oil in a pan over normal heat. Add mustard seeds, cumin seeds urad dal, chana dal and let them splutter for a minute.

Add green chilli, chopped onion and sauté for 2-3 minutes until onions turn translucent.

Add turmeric powder and salt and then add tomatoes and peas.

Sauté for 2-3 minutes and add 2 cups of water and bring to a boil.

Add oats and let it cook for 5-7 minutes. If it looks dry then you can add water as per requirement.

Garnish with chopped coriander leaves and serve hot.
