With the mango season round the corner, this delicious salad is made with firm-ripe mangoes, sweet cucumbers and crunchy onions drizzled with a sweet and spicy dressing.

Preparation time: 10 minutes

Makes: 1 serving

Ingredients

  • ½ alphonso firm ripe mango, peeled and cut into long ¼ inch thickness sticks

  • ½ cucumber, peeled and cut into long ¼ inch thickness sticks

  • ¼ red onion, thinly sliced

  • 10-15 coriander leaves, finely chopped

  • ½ tablespoons white balsamic vinegar

  • ½ teaspoon olive oil

  • Salt to taste
