This Cobb salad is easy to assemble but sure looks stunning when served. Everything about this salad is good! This protein-packed salad is a meal in itself loaded with crisp lettuce, juicy tomatoes, boiled eggs, creamy avocado and crumbled feta cheese.

Makes: 1 serving
2 hard-boiled eggs
30 g paneer made from cow's milk
30 g lettuce, shredded
1 small tomato e 20 g feta cheese e 1 small onion e 1 avocado
For the dressing
2 tablespoons balsamic vinegar
1 tablespoon mustard
1 garlic clove, finely minced e ¼ cup extra virgin olive oil e ¼ teaspoon salt
¼ teaspoon black pepper
Boil the eggs and cut them into pieces.
Chop the paneer into square shape and roast it turns light brown in colour.
Chop avocado, tomatoes and onions lengthwise.
On the serving platter, place the shredded lettuce and add the eggs, paneer, avocado, tomato and onion.
Transfer dressing ingredients to a blender jar and whisk for a minute
Drizzle over salad just before serving and crumble feta cheese on top.
