Falafel Tikki

Soaking time: Overnight Preparation time: 20 minutes Cooking Time: 12 minutes Makes 8 tikkis

Ingredients

• 200 g chickpeas, soaked and drained

• 1 onion, finely chopped

• 2 garlic cloves, finely chopped

• 1 tablespoon coriander, finely chopped

• 2 tsp ground cumin

• 1 tsp ground coriander

• 2 tablespoons plain flour

• Salt to taste

• 2 tablespoons olive oil

Method

1. Soak chickpeas overnight.

2. Drain the chickpeas thoroughly.

3. Place the chickpeas, chopped onion, garlic, coriander, ground cumin, ground coriander, flour and salt to taste in a food processor, and grind the mixture until it is smooth.

4. Shape the mixture into tikkis with your hands.

5. Pour the olive oil into a non-stick frying pan and place over medium heat.

6. When warm, fry the tikki for 3 minutes on each side ensuring that they are golden brown.

7. Serve hot with chutney.
